Such an easy one-pan recipe, you only need a roasting pan and an oven. Delicious on an autumn evening like this.
Preheat the oven at a temperature of 180ºC.
Cut 1 red pepper, 1 red onion, 1 courgette and 1 eggplant into large pieces and add olive oil and salt & pepper. Put the mixture in a roasting pan and add some fresh thyme. Goes into the preheated oven for 20 mins.
Remove out of oven, add some tomato-passata and stir. Lamb chops on top. A bit of olive oil and let sidder another 10 mins in the oven. Just before serving, sprinkle with some balsamic vinegar. Delicious!
Vegetables fried in olive oil in a frying pan. Reminds me of the sun. Makes me thinking about a sunny country like Spain or Italy. Brings a smile on my face. I adore those colours: red, yellow and green peppers. One red onion and a hand full of thyme. Let it fry for about 20 mins. And ready it is. If you want, you can add some Ebly. Also tasty!
So easy: belgian endive, cream and thyme. That’s all you need to prepare this delicious dish. Ready in 20 minutes. I serve it with some meat like a pork cutlet or a sausage. Hmm!
Went out last night to disover a new place at Place St-Catherine: Comptoir Be Burger. A trendy place that attracks young and old. Or you can go for a drink, or for a meal, or combine both of them. Price/quality is top! Sam the bartender knows what he is doing and he is doing it dawn very well 😜
We went to taste a few new G&T creations.
The first one was made of Bombay Gin, Fever Tree Tonic, orange and lemon zest, slices of apple (Granny Smith), redcurrant and black peppercorns, thyme. Very soft taste, perfect match of flavours!
The second one was made of Bombay Gin, Fever Tree Tonic, slices of lemon, half a passion fruit, redcurrant and rosemary. Feels like you’re in heaven!

Ingredients (serves 2): 150gr penne, olive oil, garlic, 250gr mushrooms, 100ml vegetable stock, 175ml cream, 100gr Gorgonzola cheese and some thyme.
I never tried to combine these ingredients before but as I saw this recipe @libellelekker I wanted to give it a try. And it’s worth trying it, an excellent pastadish!
Cook the penne following the instructions on the package. In a separate pan, heat the olive oil and add the garlic. After some minutes add the mushrooms (cut in slices) and let stir for 5 minutes. Add the vegetable stock and the cream and let cook for an extra 10 minutes untill you get a sticky sauce. Mix with the cooked penne and serve. On your dish, add some Gorgonzola cheese and some thyme.
My food challenge this week – day 3
As I’m homeworking today, I have the possibility to prepare a quick and easy lunch. And I am in a pastamood today. So here we go. Ready in 20 mins.
Boil some pasta following the instructions on the package and set aside.
Fry some into-slices-cut onions and mushrooms in olive oil and add a bit of thyme. Put the cooked pasta on top, add cream & parmezan and stir everyhting in the pan. Let it rest for 2-3 more minutes and it’s ready to be served. Food heaven!
Goal for tonight’s dinner: no carbohydrates. Only vegetables and meat. And I’m keeping in mind that my husband adores to eat his « potatoes » every day. Not an easy job!
I started checking the foodblogs I follow and I found this sweetpotato gratin recipe (www.whatsgabycooking.com). Seems a perfect replacement for « his » potatoes 🙂 Let’s combine this gratin with some lamb chops…
