Duo of sole and scampi, accompanied with leek, zucchini and a truffle gravy




There are different kind of blanquette (stew), the famoust ones are blanquette de veau and blanquette de saumon. I decided to create my own one, blanquette de poulet. Chicken stew, without following any specific recipe. Ingredients I used are chicken, onions, carrots and leek. For the sauce I used cream, vegetable stock, mustard and white wine. Leave it for 30 minutes on a medium heating level and add at the end some fresh parsley. Serve it with white rice.
