Recipe Pascale Naessens – Libelle Lekker 30-08-18
Such an easy one-pan recipe, you only need a roasting pan and an oven. Delicious on an autumn evening like this.
Preheat the oven at a temperature of 180ºC.
Cut 1 red pepper, 1 red onion, 1 courgette and 1 eggplant into large pieces and add olive oil and salt & pepper. Put the mixture in a roasting pan and add some fresh thyme. Goes into the preheated oven for 20 mins.
Remove out of oven, add some tomato-passata and stir. Lamb chops on top. A bit of olive oil and let sidder another 10 mins in the oven. Just before serving, sprinkle with some balsamic vinegar. Delicious!
No soup without (bread) croutons!
Do you know the secret to fry them golden brown and not black ? In other words, do you know how to avoid to burn them while frying?
Use clarified butter to fry them in a frying pan. It’s a kind of « clean » butter where certain solids are removed and only the pure butterfat remains. It supports high temperatures and can be kept for a longer period (store in a dark, cold place).
Making your own clarified butter is easy peasy! Melt unsalted butter slowly on a medium-low heat. It takes some minutes, certainly don’t raise the heat in order to rush it. Once the butter is melted, you’ll see a foamy white layer (proteins), use a spoon to skim it. Turn down the heat and let simmer for 10 mins. You’ll see appear a brown layer on the bottom of the pan. Remove from the heat, don’t stir and pour trough a sieve cloth into a jar. The milk components will stay in the cloth. You obtain pure butterfat, clarified butter.

For the first time in my life I went to a Food Photography Workshop, one for beginners of course. As I told you already, I started this food blog two years ago because I wanted a « place » for myself where I could stock my food pictures.
