Château d’Yquem (1994)

1280A603-B3BE-46A0-97AC-FE82ED1B93F4Went over to a friend’s house yesterday evening and he absolutely wanted us to taste one of his wines. He has a wine cellar with around 100 bottles and he told us he wanted to share one of his favourite bottles with us. I have to say, I’m a wine lover, although my knowledge about wines is rather limited.

Spaghetti Bolognaise

26F2DABD-C32A-415D-8FBF-1AB5BE86713AI know, I know. I’ve posted already so many times pictures of this pasta recipe. Can’t help it, it stays one of my favourite lunch dishes: Spaghetti bolognaise.

You do know that in Italy they don’t do this bolognaise thing? It’s a belgian « creation » thinking we have italian habits, haha! In Italy they have the « al ragù » pasta that is quite similar, but you’ll also find many different recipes of it. And they don’t limit it to spaghetti, they also serve it with penne or tagliatelle.

My homemade sauce is prepared with onions, minced beef and tomatoes. Nothing else. Just perfect. And I love this picture!

Sun-sandwich ☀️

09C60DFD-CD97-4262-8575-D36F01E9CA55When it’s raining outside and you absolutely wanna enjoy some sunshine, you need to be creative and bring the sun yourself in your life. One way to do this, is by preparing this sandwich for lunch. Sundried tomatoes and olive oil, mozzarella, aubergine,… I can feel straight away the warmth! And I’m a smiling lady again!

Cod fillet with « fine champagne » sauce

47AE4F1F-F458-4BF1-B394-5DC7D88768C3Busy evening yesterday as we went diving. So didn’t have the time to post last night’s dinner. Cod fillet with « fine champagne » sauce. For real food lovers 😍

Ingredients for the sauce: 1 shallot, 120 ml fish stock, 1 glass of champagne, 200 ml cream. Melt some butter in a frying pan and add the shallot cut in little pieces. After 2-3 minutes add the glass of champagne and let cook for some minutes. Then add the fish stock and let again cook for some minutes. Followed by adding the cream and let reduce till you obtain a nice and consistent sauce.

As vegetables, a green touch of spinach and flageolets (green haricot beans). Steam them 5-10 minutes and they are perfectly crispy.

Ratatouille

A159F499-6C68-48D6-B4F2-54E7A311FF26Probably the most famous french vegetarian dish. Full of flavours, healthy as can be.

My ingredients: aubergine, courgette, sweet red pepper (original recipe: red or yellow peppers), shallot (original recipe: onion), veal stock (original recipe: red wine vinegar), tomatoes and some herbs: rosemary and bay leaf (original recipe: basil).

Fry some olive oil in a frying pan, add the vegetables and the herbs, a bit of sugar and let stir for 30-40 minutes.
