Salade Niçoise … I use salad, green beans and tuna, I also add cherry tomatoes and cucumber.

Let the cherry tomatoes marinate 30 minutes in the fridge before adding them to your salad. Combine 1 red onion, a teaspoon of dried oregano, some olive oil and balsamico vinegar, and add the cherry tomatoes cut in pieces
Today the eldest brother turns 28… I can’t even believe it. I was 12 when he was born, the first one, the other one appeared two years later 😜 My baby brother with who I watched every sunday « Samson&Gert », a television program for children. And we loved it! He called me ‘bislet’ instead of ‘liesbeth’, so funny! Today he’s a grown up man and I’m proud of him. Love you to the moon and back ❤️❤️❤️
Friday evening. Start of our holidays as we have some days off. We go for an easy peasy dinner instead of going out for a meal. The only ingredients you need are olive oil, bacon or chicken, mushrooms, cream and linguine. For the flavour and the color: salt, pepper, nutmeg. Ready in 15 minutes and so tasty, hmmm!
Friday, last day of the week, most dangerous day of the week. The fridge is almost empty and we are tempted to say « ahh, don’t worry, we’ll buy something outside to have a quick breakfast ». But no, not today, even on this morning we’ll have a healthy breakkie! Some cottage cheese, an apple (Pink Lady) cut in slices and some toast. Happy Friday!
Chicken in a creamy mushroom sauce. I was already thinking about it this morning. And as the husband was going to be early home tonight, I asked him to prepare his famous homemade fries. Oh what did I enjoy this dinner!
The creamy mushroom sauce is so easy to prepare. In a frying pan, heat some olive oil. After 2-3 minutes, add chicken filet cut in slices and 1 onion cut in slices. Wait 5 minutes, add 150ml chicken stock and let it simmer for 10 minutes. Add 100ml cream and let it again simmer for 15 minutes untill you get a thick, creamy sauce. Finalize with black pepper.
I try to cook as much healthy as I can and I therefore always use olive oil instead of butter. But there are two exceptions for which I do use butter: steak and fish. They absolutely need to be fried in a frying pan full of butter! What a difference in taste. PS don’t count the calories 🤫
This evening we had a lovely, fresh piece of sea bass with purée and « courgettini » of carrots and courgette. I don’t think there’s an english word for « courgettini ». If so, please let me know! These are small strings of carrots and courgette, you simply fry them in the frying pan with the sea bass. Enjoy your meal!
« Choucroute » is a famous Alsatian recipe: sauerkraut with sausages and slices of salted pork. Accompanied with mashed potatoes. Quite heavy stuff, but ideal winterfood. For the real lovers: add some mustard. Once in a while I love to eat this dish. Especially when it’s prepared by your best friend…
